A Family History of Food Innovation: I am a fourth generation food entrepreneur: great granddaughter of Emilio Coletta, who brought Italian Ice cream to Memphis 100 years ago, granddaughter of the Colettas, who were the first to bring pizza to Memphis in the 1950's & who created the first BBQ pizza in the II. S. (Elvis' favorite pizza). I am also a trained chef and mother of four, who recognizes the need for grain free baked goods, made with simple, nutrient dense ingredients. Given my entrepreneurial DNA, it was natural for me to found Boulder Bake, to use my culinary talent to create healthy products without sacrificing flavor.
